Pancakes

Anyone keen to make pancakes?? The nursery recipe is very forgiving and we always have successful results.
1 ½ cups of self raising flour
1 teaspoon baking powder
1 tablespoon sugar (optional but does make the pancakes brown more easily)
2 tablespoons of oil or melted butter
1 or 2 eggs (we use 2 if they are small but 1 usually enough)
400 mls of milk (cows, coconut, almond etc all work well)

Put the dry ingredients (flour, baking powder and sugar) in a bowl and stir to combine.
If you have a shaker put the oil/butter, egg and milk into it and shake vigorously then stir into dry ingredients. If you dont have a shaker – you just have to mix a little harder – add the oil/butter, egg and milk to the dry ingredients and mix well. You are aiming for a thick batter – add a little more flour if its very runny or a little more milk if its too thick. Spoon onto a hot flat pan (frying pan works well) making circle/pancake shapes. Wait until the pancakes start to bubble on the top and then use a spatula to turn over (hopefully more successfully than I managed in the demonstration 😉 )
If you make the batter a little runnier you can make bigger pancakes and if you make it very runny you can even call your pancakes crepes.
